Funnel Cakes!






2 cups flour
1 1/2 cup milk
2 eggs
1 tsp salt
1 tsp baking powder
2 tsp vanilla extract
powdered sugar
oil for frying
funnel, or pastry bag, or a ziploc with one corner cut off


If you have a deep fryer, start heating the oil. If not, use about 4-6 cups of oil, a deep pot, and put it to heat.

In a bowl mix in the flour, baking powder, and salt. Add the eggs and the milk, and whisk or stir until there are no visible lumps. Add the vanilla extract and mix well.

When the oil is hot. pour the mixture into pastry bag (or whatever you are using) and pour into the oil in a circular pattern. Let it brown, then turn to the other side. When done, place on a paper towel and sprinkle with the powdered sugar.
