Stuffed Bell Peppers


Yield- 4 whole peppers, 8 halves



  • 4 Green Bell Peppers
  • 2 packets of Spanish Rice (You can do it from scratch, but this is to save time)
  • Mozzarella, Cheddar Jack Cheese (Or any cheese/cheeses you like)
You can also add some meat, but since I don't eat any I choose not to add any.

1. Pre-heat over to 350
2.Wash your peppers. If you are going to leave them whole; cut of the top and gut the inside. If you are going to half them; just cut down the middle. If you cut off the top, the rice and cheese will most likely fall off.
3. Like a baking sheet with foil (Shiny side down) and place your peppers on it. Bake them for about 30 minutes ( depends on the size) or until the skins start to wrinkle.
4. While your peppers are baking, make your rice according to the instructions and slice, or grate, your cheese.
5. When your peppers are done, take them out of the oven and stuff them with the rice. Top of with as much cheese as you like. 
6. Place in oven once again just long enough for the cheese to melt and brown at the edges.
