Potato Stuffed Pasta Shells




THIS WILL MAKE ABOUT 12 SHELLS

  • 12 cooked to al dente giant pasta shells (if you cant find these, you can use Manicotti) 
  • 4 large boiled potatoes, no skin and mashed with a bit of salt and pepper only
  • About 2 cups of cheese ( You can use any kind of cheese you like, and as many as you like. I used about 3/4 of a cup of each Mozzarella, Ricotta and Colby jack.)
  • 3 cups Chopped raw spinach 
  • 1 small tomato, sliced very thin
  • Combine the spinach and the potato along with your cheese(s)
  • On a foil lined baking sheet, align your pasta shells so the opening in at the top, and gently stuff the potato mixture in them
  • Top with some cheese and bake in a 350 degree oven until your cheese melts.

The great thing about these is that you can stuff them with anything and everything that you like. With some ground beef ,sauce, and cheese, these can easily be turned into lasagna boats. Or if this recipe is to plain for your taste, you can add more vegetables and whatnot into the mix. The versatility of these is endless!
